The Best Cooking Class in Morocco

When I think about my recent trip to Morocco, one experience stands out above the rest: an intimate Moroccan baking class in Casablanca with Khadija. If you want to truly experience Moroccan culture, skip the usual tourist activities and instead, dive into something more authentic and personal—like learning how to bake traditional Moroccan treats in someone’s home.


I found Khadija’s class while planning my trip, and it ended up being one of the most memorable parts of my journey. She welcomed me into her beautiful home, where the experience quickly became more like baking with a friend. As we mixed, kneaded, and baked, we chatted about Moroccan culture, life in Casablanca, and of course, the delicious food we were creating!



What We Made


Khadija customizes the class based on your preferences, and offers both cooking and baking options, but I opted for baking. During the class, we made an incredible variety of Moroccan baked goods. Here's what was on the menu:


  • Four types of cookies (including my personal favorite, which I'll share the recipe for below)

  • Baghrir – the famous Moroccan "bubbly" pancakes

  • Two kinds of Msemmen – flaky, layered Moroccan flatbread

  • And we ended the day with traditional Moroccan mint tea – a cultural ritual you just can't miss!

My Favorite Moroccan Cookie Recipe - Richbond


These melt-in-your-mouth coconut and apricot cookies are perfect for anyone with a sweet tooth and so easy to make!



Ingredients:

125g flour

50g butter

40g sugar

1/2 egg

25g oil

Vanilla

2g baking powder

Lemon zest


For decorating:

Shredded coconut

Apricot jam (or your preferred flavor)


Instructions:

  • Preheat oven to 385°F

  • Place butter, oil, sugar, vanilla, lemon zest, and egg in a large bowl. Mix with a whisk until everything is well mixed together and the sugar is dissolved.

  • Then add the flour, baking powder, and pinch of salt to the wet ingredients, and mix using a spoon (or your hands if you're doing it the true Moroccan way).

  • Start forming your balls and place them on a cookie sheet lined with parchment paper. Try not to make your cookies too big and make sure the size is consistent. You can make a hole in the center with your pinky that goes 3/4 of the way through the cookie to fill with jam when decorating.

  • Bake in the oven at 385°F for about 16 minutes. The timing will depend on the size of your cookies, so keep an eye on them.

  • Put apricot jam in a bowl, then blend your coconut shavings into a powder and place in a separate bowl. You can add a touch of orange blossom water to the jam if you'd like (highly recommend, that was delicious)

  • Once the cookies come out of the oven, make sure to let them cool 5-10 minutes before assembling

  • Dip each cookie in the apricot jam and then roll them in the coconut powder. You can leave them submerged in jam for longer to soak up the flavor, but I preferred just a quick dip in the jam. Then add a dollop of jam to the hole in the center to give the cookies a pop of color.
